A Vegetarian in the Ukraine



A young Jewish American man endeavors to find the woman who saved his grandfather during World War II in a Ukrainian village, that was ultimately razed by the Nazis, with the help of an eccentric local. 

'Everything is Illuminated' was adapted from the novel of the same name by Jonathan Safran Foer.

Jonathan: I'm a vegetarian.

: You're a what?

: I don't eat meat.

Being a vegetarian in Ukraine 
Being a vegetarian in Ukraine isn't easy, as meat is an important ingredient in most Ukrainian dishes. But it isn't impossible as the country's best known dish, Ukrainian Borsch (a deep red beet-based soup), can be a meatless vegetable soup or based on either chicken or other meat bouillon.

They say "there are as many recipes of borsch as women in Ukraine". The many versions of borsch served throughout the country reflect the individuality of Ukrainians as well as their ingenuity. Just Google or search on YouTube 'Ukranian Borsch' and hundreds of recipes come up, including lots of vegetarian recipes.
